Today I’ve picked a topic which will resolve a very common problem in most of the houses: Leftover. Yes it is the most dangerous threat to any home at least it seems to be in my case. I have to deal with a horrible situation when I find things in my refrigerator days after I prepared them. But the scenario becomes worst when I find out things still present in the corners of my refrigerator about which I had already forgotten or I assumed they are gone!
On the other hand I keep trying things days after days and keep piling up things in my tiny refrigerator. Even I had taken small break from trying my hands on new things. Alas! My this kind of big step even couldn’t save my brave storage from being over loaded.
But as they say, “It’s better late than Never”. I decided to reuse my leftovers. I used leftover veggies for next day’s rice. But that also have become boring quite quickly and i am not even a rice lover. Finally I got the idea of making Frankie and wraps with those left overs which came out very nicely with touch of Homemade BBQ sauce or Italian Bolognese Sauce or even Homemade Dijon Mustard sauce.
But today’s story is something different for me. Not only it was a holiday for me but it was supposed to be a relaxing day. But hang on it is my day so how could it be complete without any trouble! I found out I’m out of bread! Yeah so much complaining on left overs and now I don’t even have any fresh one! This is not the end gradually I also came to know an indefinite strike is going on here in my city and I’m lost man! Damn! I have little left over chicken 2 jalapenos, few red chili peppers and little this and little that. but what the hell is that in the dairy section of my refrigerator?? It is a store bought pizza base which I had bought last week and forgot completely. But hey you are my life saver. So let’s celebrate it.
Yummm. That’s the only word came out from my mouth when I finally had the 1st bite of the day; not to mention it was almost lunch time then. If you had already tried this kind of stuff still ill insist you to try this one atleast once. I’m sure you’ll be amazed with the simplicity and timing. Yes my dear it takes only 10 mins to cook and 5 additional mins to complete your preparation. What else! Have them right from the oven the way I did and got my tongue burnt. And yes while it was baking I made some morning tea for myself. So what its noon already!

Preparation Time: 5 mins
Cooking Time: 10 mins
Total Time: 15 mins
Yield: 1 individual serving
Ingredients:
Pizza base: 1, small (I used store bought pizza base for single serving)
Tomato ketchup: 2 tbsp
Cheese slice: 2
Left over chicken: ½ cup
Jalapeno: 1 (optional)
Red pepper: 1 (optional)
Olive: 2-3 (optional)
Mozzarella cheese: 2 tbsp (optional; I skipped this)
Preparation:
If you are using nonstick baking pan you won’t need any greasing. Otherwise grease your pan with few drops of oil or butter. Preheat the oven to 2200C.
Shred the left over veggies or meat whichever you have.
Place the pizza base on the pan. Add tomato ketchup on the surface and level with the back of the spoon. Place the shredded left over veggies or meat on the top; scattered them out.
Place cheese slices on the top to cover the surface. Make sure the shredded left over is covered completely.
Now arrange the jalapeno, red pepper and olives on the top.
Place the pan in the preheated oven on the top rack and bake for 10 mins.
Your left over pizza is ready for grab. Cut it into wedges and relish the warm pizza with your morning cuppa.
