Bacon Wrapped Baked Egg in Toast Cup: 3 Ingredients Breakfast in 15 mins

As I’m not feeling well this week with my teeny weeny additional problems I had to visit my doctor after a long time and my appearance made him smile too. Now that’s a bonus for me. And guess what he prescribed me?? I’m pretty sure you can’t even imagine it. It is a Healthy and complete meal. A meal on breakfast! Yaak, that’s made me puckish But I know I have to obey his every word for sake of myself. I started having cereal, fruits and juice instead of my daily toast. They might be the keeper of my health but they can never be the keeper of my tummy. As a result now my mind had started to drift away with my missing toasts. Yes, I’m that much bread lover actually. I’m having this toast-margarine breakfast since I was a little child and never got bored with it. To me it’s not just a breakfast item any more it has become my necessity over the period.

When I was in Taiwan I enjoyed loads of bacon there; mostly in breakfast. So, the idea of having bacon in breakfast struck me since then. But I couldn’t find bacon here around me. Recently I visited a new grocery store and found loads of my beloved items; thanks to my friend ‘A’ for it. Without wasting any more precious time I checked with my doctor whether he is considering bacon as healthy or not. Gladly he mentioned though it is not healthy but once in a while I can have it. I simply love him for saying the last part. Anyways, those words are enough for me to pile up my freezer with bacon and so did I.

But after having it for few days as always I got bored and I started looking for something new. Hence, proved again, “I’m an impulsive buyer with a freaking mood swing” as per Bhatty. This time I got strict notice to finish up these bacons before I fill up my shopping cart again. So I started looking for new recipes; what a pain in the ass! But thankfully I did and look what I got! Though you cannot actually get a glimpse now of all the beautiful recipes I got but gradually you will get to know them in my blog provided you don’t tell Bhatty that I already said I’m thankful to him and my experiments are successful.

Today I’m sharing a super easy and duper quick delectable breakfast item: Bacon Wrapped Baked Egg in Toast Cup. It is ideal for weekdays breakfasts or weekend brunches. All you need is 3 very easily available basic ingredients and 15 mins from your tightly packed schedule of the morning. Even it takes lesser time than your toaster. And you will have all three protein nutrition and carbohydrate together in your breakfast platter just spending 15 mins on it. What else any one can ask for after such a heavenly start of the day!

Preparation Time: 15 mins

Cooking Time: 15 mins

Total Time: 30 mins

Yield: 6 individual serving

Ingredients:

Bacon: 12 strips (2 strips per cup)

Egg: 6 (1 per cup)

Bread: 6 slices: (1 slice per cup)

Butter Or, Olive oil: 1 tsp + few drops (for brushing only)

Preparation:

Take a large pan which is fit enough to fry the bacon. Drizzle some oil and place bacon strips side by side.

It is okay to make little over crowded pan as bacon will shrink to half of its original size. But just make sure they don’t overlap,

Fry them for for 3-4 mins in total. That means 1½ mins – 2 mins max on each side. Don’t over fry them. Otherwise they will be crisp and our aim is to cook the bacon until half done so that they will still remain pliable. Don’t worry we will cook them in the later part of cooking. No I’m not actually planning to have raw or half-done bacon on my breakfast!

Discard the fat and reserve the fried bacon on paper towel.

Now it’s time to start working on most critical part of this preparation: the bread! You must be thinking that I’ve lost my mind. Hello, dint you know that experience speaks! Yes cutting the bread neatly in perfect shape is a tricky job and you all know how bad I am in this sort of stuff.

All you need to do is place a slice of bread on kitchen counter and place the muffin mold on the top of it. the bottom of the mold should be on the surface of the bread slice. Run the knife across the edge. Voila! You will get a circular disc from the middle of soft bread.

Yeah, I did it. I did it. Though they are neither neat nor perfect, I’m happy with them. (read, no other options were there.) Aren’t they looking tall-n-slim now?

Now back to business, grease the muffin trays by brushing with oil. Damn! When will I get a baking oven instead of this microwave!! And I’ll get rid of theses stupid silicone muffin trays! (sob sob) if you have metal trays use them cherish them; they are the best for this preparation. but as I have only microwave oven I can’t use them as they won’t fit in the microwave. So I bought and cut these stupid looking but efficient molds into half or according to my need and use them happily. Atleast I pretend to be so.

Place one bread disc to each mold. Press them gently downwards to make them sit firmly. They shouldn’t fall apart.

Preheat the oven to 200⁰C. Place the trays in the oven and bake for 3 mins at 200⁰C. This will harden the bread discs a bit. So if you find your bread hard don’t worry. It is supposed to be like that only. This is necessary to hold the entire stack after baking.

Now take a bacon strip and gently place it inside a muffin mold by covering the wall. Place another strip on the bread disc. Make sure you cover the inside of the cup and the bread completely. It will form a bacon-cup by itself. Use additional bacon strips if necessary. Follow the same with rest of the muffin cups.

Now place the tray back to the oven and bake for another 2 mins. This will cook the previously half-done bacon completely. If possible use the top most rack of your oven thus the bacon will be crispy.

While bread and bacon is cooking inside the oven let’s crack the eggs separately in individual bowls and keep them handy. This will not only help you to pour them easily on the muffin cups but will also help you to discard extra egg whites if you are using large eggs.

When bacon is done pour eggs one by one to all the cups. Don’t let them overflow.

Now place the cups back to the oven and bake for 10 mins or until egg whites are set. Egg whites should be all white and yolks should be firm on the surface. If you like runny egg yolks bake them for little less time or if you like hard done yolks bake them for additional 5 mins.
