Mayonnaise is probably the most popular condiment. Not only that, it has the most versatile usage with large scale of flavors. And not to mention, it is my favorite condiment too. Traditional ‘Mayo’ is nothing but a stable emulsion of oil, egg yolk and vinegar or lemon juice. But tons of flavors can be created with this simple base of mayonnaise. The most famous is French style mayo; with mustard sauce/paste. Others are herbs infused, different spices or with simple egg whites.
But all these are based on egg; either white or yolk. And these mayonnaises are hard to keep fresh for a longer period and definitely full of cholesterol, animal fat. It is real pain for vegan or weight watchers to gulp down their sandwiches, subs, salads or even simple bread slices without mayo if one is addicted to it. In my case, I’m not vegan but definitely trying my ass off to shed a lot extra kilos. So I had to try Egg less Mayonnaise. You can get store bought but again those are full of corn starch and glucose and artificial stabilizer which is not a good thing to have on regular basis.
So here is my try with Skinny Vegan Mayonnaise in One minute. Go for it!
Preparation Time: 05 mins
Cooking Time: 05 mins
Resting Time: 00 mins
Total Time: 10 mins
Yield: 2 cups
Ingredients:
Soy milk: 1 cup (flavorless)
Extra virgin olive oil: ½ cup
Vinegar: 1½ tsp
Crushed garlic: 1 tbsp (optional)
White pepper powder: 1 tsp
Salt: 1 tsp
Equipment:
Food processor
Dry & clean glass bottle (or glass bowls with lid) to store
Preparation:
Pour the milk in the blender. Make sure you measure the milk correctly in measuring cup. Chilled milk gave better results to me
Add crushed garlic, white pepper powder and salt into the milk.
Pour the oil into the jar in a very steady slow stream and blend for 30 secs. Don’t drop the entire oil at a time, this will make mayo curdled. maintaining the steady stream is very much important to achieve a good quality thick mayonnaise.
Mixture will start coming together by the time. If not, blend for another 30 secs.
Keep the blender running and add the vinegar slowly in a steady stream. Within few seconds mixture will be thicken like thick paste. If you prefer a bit thinner mayonnaise use the vinegar/lemon juice at the beginning of the process. If you prefer the thick version like me, add it only at the end.
Voila! Skinny Vegan Mayonnaise is done just in One minute. Spread it on your bread/ tortilla/sandwiches as spread or mix with your salad or any other way you like to have your favorite Mayonnaise.
Store the Skinny Vegan Mayonnaise in a clean and dry airtight glass jar. Any glass bowls with tightly fitted lid will also work fine. This mayonnaise can be stored in refrigerator up to 8-10 days. I couldn’t save more than that as it was swiped off already.

Other Variations:.
Mustard flavored: Use 2 tbsp of mustard sauce with the same ingredients. Add the mustard sauce at step 2 (with garlic, salt). Any mustard will work good with it. I personally prefer Spicy Brown Mustard over Dijon Mustard)
Sriracha flavored: Use 1-2 tbsp of sriracha sauce or any other hot sauce. Adjust the amount according to your personal choice. I like it super hot so I used 3 tbsp of Sriracha which made the mayonnaise bit thinner too.
