Summer is the synonym of sun and cocktail without the sea to me, honestly; sigh! I’m a complete winter girl and I have no friendship with summer at all. Every year I feel like I’m trapped in between the scorching heat and dry blow. But there is only one thing which keeps my smile alive during the hot days, fresh fruits. Yes, loads of loads of fresh juicy fruits are available here in summer. And the best part is good old tropical mangoes, pineapples, lychees are sharing their shelves with exotic fruits like kiwis, peaches, plums, passion fruits these days. They certainly are making me happy. Because basket filled fresh fruits also mean many fruity desserts and delicious cocktails and on the way. Hence today’s post Fresh Peach Bellini, an Italian wine cocktail.
As I mentioned earlier Bellini is a wine cocktail, originated in Venice, Italy. Traditionally fresh peaches used to be marinated in sparkling wine to absorb the flavor completely. Later there were pureed and mixed with cherry or raspberry juice/syrup to achieve unique pink color and finally topped with champagne or sparkling wine.
Fresh peach puree or nectar is used now a days with wine to produce instant cocktails. As peach is seasonal fruit it is hard to enjoy this drink throughout the year. So frozen peaches or artificial peach flavors are started to sneak in the canvas though these days many other fruits are used to present variations on the table (and on the menu as well).

Ingredients:
Read the entire recipe and tips carefully before you start cooking.
Do make sure all ingredients are at room temperature (unless mentioned) and weighted or measured correctly in appropriate weighing machine or measuring instruments such as cups or spoons. Remember these are not your regular cups or spoons which you use in your daily life.
Peach, fresh or frozen: 2-3, medium sized (I used fresh peaches) + few wedges with skin for serving
Sparkling wine or Champagne: 750ml
Ice cubes: handful
Peach juice/syrup: 2 tbsp or powdered Sugar: 2-3 tbsp (optional, only if you want to sweeten your cocktail; I dint use any sweetener)
Equipment:
A sharp knife,
Chopping board,
Food processor,
A large bowl,
Dry & clean tall Champagne /wine glasses to serve
Preparation:
Wash & Clean Peaches, dry with paper towels.
Peel the skin off carefully.
Make slices from the sides of the peaches and discard the seeds.
Chop the peaches roughly. No need to slice thinly or finely as they are going to be pureed.
Store the chopped peaches in a covered bowl until you are done with the rest, otherwise peach cubes will be darken in color.
Fill the food processor with chopped peached (reserve few wedges for serving).
Pour 2 tbsp of Champagne or whichever alcohol you are using in the food processor. If you wish to use any sweetener or sugar or any syrup, add now.
Close the lid and pulse for 1 min in low to puree the fruit.
Once puree is thick and dense without any fruit chunks remove the lid and add some ice cubes and run again for 30 secs.
Remove the lid and keep the puree handy.
Arrange tall Champagne or any wine glasses and evenly distribute the freshly made peach puree in them.
Pour champagne or whichever drinks you are using in the glasses. Be careful, foam will be formed and of course you don’t want to waste any of your champagne /wine.
Add either peach wedges on the rim or drop few peach cubes in the drinks.
Fill up the glasses to the rim and serve immediately. Enjoy!
Variation:
1. Use frozen peaches instead of fresh ones.
2. Use any other soft light textured fruits instead of peach.

3. Store bought peach puree can also be used through the taste won’t be same.
4. Use peach/raspberry/cherry juice/syrup instead of sugar if you prefer sweet cocktails.
5. Non-Alcoholic version: Use colorless soft drinks like sprite or 7-up instead of wine.
