Officially Sunday nights are the pizza night for us. After a whole week’s stress Sundays come as a soft breeze in our life and it is meant to be enjoyed exactly the way you want. In home we spend most Sundays in our balcony with number of cups of tea and unlimited snacks and dinner is always pizza. Mostly home delivery sometimes take away too and rarely homemade. I tried few pizzas at home but with store bought ready-made pizza base like BBQ Sausage & Bacon Pizza, Leftover Chicken Pizza, Pizza Appetizers.
These readymade pizza bases are quite easy to handle and if you cut into wedges they will become bite size pieces. But I found few problems with them. Like, you can’t simply put more vegies on them as they come in single serving only; you can never combine meat with fresh veggies on top for same small size issue and most importantly if you reheat the cold pizza it will turn into biscuit only. I only prefer them for immediate consumption on emergencies and rarely use them these days.
After tasting all available pizza stores I had chosen one renowned pizza chain for my regular home delivery and I have been with them since last three years. But recently I had experienced few changes in their service which pulled down their quality drastically. After one final horrible experience I had my determination to try pizza at home from scratch.
I always love thin crust pizza with loads of meat on top. I don’t like my pizza overloaded with cheese as it turns the pizza heavy. So I tried out this Homemade Yeast Free Pizza base and it came out so nicely that I immediately wanted this pizza to be special. I spread Homemade Coriander Chili Lime Pesto as the pizza sauce on the base and used sausages, sweet corn, chopped red bell peppers and few slices of jalapeno for the extra kick. It took me few minutes to realize that half of my first pizza was already gone before I could manage one single click of that. Thankfully I saved another base to get me the pictures of final product.

Cooking Time: 25 mins
Resting Time: 0 mins
Total Time: 30 mins
Yield: two 9” pan pizza or four 10” thin crust pizza
Ingredients:
Pizza dough (Homemade or store bought)
Shredded mozzarella: 1 cup
Sausage: 2
Sweet corn: 1/3 cup
Red bell pepper: ¼ cup
Jalapeno: 2
Italian herbs: 1 tsp
Flour: 1 tbsp (for dusting)
Olive oil: 1 tsp (for greasing)
Equipment:
9” or 10” Pizza pan/ nonstick baking pan
Pizza cutter
Rolling board with rolling pin
Preparation:
Knead the dough and divide in 2-4 equal portions. Roll one dough ball at a time with the help of rolling board & rolling stone into your desired sized pizza base. Choose the thickness according to your preference. Prepare the pan by greasing with oil and dusting with flour.
Flip the pizza base into the pan gently and press the base around the side outwards.
Place the pan in the preheated (2000C) oven and bake for 10 mins at 2000C. By the time the bread will rise up and your home will be filled with the heavenly aroma of freshly baked bread.
Take out the base from oven and keep it on wire rack. Spread the pesto on top.
Spread the shredded mozzarella on top. Be generous on cheese if you like cheesy pizza.
Fry or grill the sausage or prepare the way you like your sausages and cut them in thin slices. Arrange the sausage slices on top of cheese layer.
Cut the top of the jalapeno, de-seed them and cut into roundels. Chop the bell peppers finely and arrange all veggies including corn on top of the sausage slices.
Place the pan in the oven and bake for 10 to 15 mins or until cheese is bubbly.
Remove the pizza from the oven and keep on wire rack for 2-3 mins. Cut the pizza into wedges and serve immediately with chilled beer or a glass of cold drink.
