I don’t see sandwiches as a food; rather it’s part of my soul. As a bread lover I also happen to love sandwiches in every possible way; be it savory, pickled or sweet-n-spicy. Only sweet sandwiches are strictly no no for me. As I enjoy sandwiches on most of the weekdays, it is a big job to keep changing the flavor to avoid repetition. But what I never had imagined is I’ll ever share a sandwich recipe on my blog. I mean it’s so easy and simple; even a 5 years old can do it. Right? But you know what; I had to share this Lemon Chicken Sandwich. Otherwise it will be unfair to the job of food blogging itself.
This is genuinely one of the best tasted sandwiches, even better than any cafe. And I simply can’t stop loving it myself. I already had this sandwich four out of five weekdays of this week! Last weekend before going out for the grocery shopping, I discovered a small tray of chicken in my freezer and two large lemons which were about to expire according to the package. I had to make something out of these as I feel very sick about throwing the food away (yes, I have an issue with wastage of food). So I quickly made some lemon chicken, under 20 mins and as a trial stuffed it in my favorite multigrain bread slices. Voila I had my best sandwich under 30 mins without any effort. I’m so glad I did it!
I’m not keeping you guys hanging any more. So here is my step by step Lemon Chicken Sandwich recipe for you all.
Preparation Time: 05 mins
Cooking/Active Time: 20 mins
Resting/Inactive time: 00 mins
Total Time: 25 mins
Yield: 2-3 servings
Ingredients:
For the Filling:
Chicken, boneless &skinless: 200g
Lemon juice: 2 tbsp
Lemon zest: 2 tsp
White pepper powder: 1 tsp (optional)
Chili flakes: 1 tbsp (optional)
Garlic powder: 1 tsp (optional)
Salt: ½ tsp
Others:
Bread slices: 6
Lettuce: 6 small leaves
To serve:
Chili Salsa Dip or simple Ketchup or any of your favorite sauces

Baking pan
Mixing bowl
Preparation:
Start with marinating the chicken. Combine all the ingredients under ‘for the filling’ in a mixing bowl and keep aside for 5 mins, covered.
When you are ready to bake, arrange chicken pieces in a baking pan and pop it into the preheated (2000C) oven. Bake for 15 mins at 2000C, uncovered. Once done, keep on standby inside the oven. When the pan is cold enough to handle remove from oven, pick the chicken pieces (don’t discard the liquid) and chop/shred into bite size pieces and dump back in the liquid from the pan and mix. It will keep chicken moist & succulent.
Now toast the bread slices in oven/grill; grease with butter/margarine if you wish for. Place 1 lettuce on each slice and dump 2 tbsp of filling on it. Place another slice on it and press gently downwards; thus the filling will be sealed between two slices. Cut into triangles and serve your Lemon Chicken Sandwich immediately with Vegan Mayonnaise or Chili Salsa Dip or even simple ketchup.
Variations:
1. Add cheese slices or shredded cheese to make the sandwich gooey.
2. Add sliced olives to add extra crunch.
3. Use mustard sauce or black pepper sauce as bread spread to add extra punch.
4. Substitute the chicken with shrimp or fish fillet.
5. Use tofu or cottage cheese as vegetarian option.
Tips:
1. The marinated chicken can be kept longer than 15 mins, probably overnight; but then refrigerate it (don’t freeze). The longer you will marinade more flavorful chicken you will get.
2. The filling can be prepared a day before. Just make sure to refrigerate the cooked chicken, covered and just warm it up before serving making the sandwich.
3. If you have sandwich maker just pop the breads in with cold chicken filling.
