Ginger Shrimp Noodles is a very simple and quick Chinese pan fried noodles preparation. Garlic and Shrimp is always a Hit and very common combination. I wanted to get over of the duo so I opted for ginger and gave it a try. And as you can see it was a great success. It can have loads of variations from sea food to different meat and even veggies as well. All you need to do is cook the noodle and throw everything in the pan; Voila you are done with it.
I chose this super quick recipe for Chinese New Year Special Dinner. I’m pairing this noodle with Five Spice Oven Baked Chicken. This gonna be my Golden Festive Days. Yeah.

Cooking Time : 15 mins (cooking)
Total Time : 30 mins
Yield : 2 servings
Ingredients:
Egg noodles : 150g
Shrimp : 8
Freshly grated ginger : 1 heaped tsp
Dry sherry Or chili vinegar : ¼ cup
Julienned carrot : 1/3 cup
French beans : 1/3 cup, diced
Spring onion : 1/3 cup, thinly sliced + 2 tbsp, finely chopped for garnishing
Oyster sauce : 1/2 tsp
Light soy sauce : 1/2 tsp
Sesame oil : 1 tbsp + 1 tsp
Preparation:
Soak the shrimps in dry cherry for 15-20 mins.
Boil water in a heavy bottomed sauce pan with few drops of oil. Add noodles and wait until noodles are almost done. Drain the water and keep the noodles in a large bowl. Toss the noodles with 1 tsp of oil to coat well. now noodles will not stick to each other.
Heat rest of the oil in a wok until oil is smoking hot. Add ginger and sauté for 30 secs. Add carrot and french beans, sauté for few more mins. Add a splash of water to produce steam. It will help the veggies to get done quickly. Throw in the shrimps and continue frying on high flame. Add sauces and sliced spring onion and finally noodles and toss well to coat everything evenly.
Remove immediately from flame to avoid over cooking. Transfer to the serving bowl and sprinkle chopped spring onion on the top.
Serve hot with Five Spice Chicken.
