After spending almost 9 months in blogging I can happily say blogging definitely belongs to those pleasurable things which you will cherish on your good days and similarly will teach you lessons on your bad days. Blogging gives me back kind of positive energy which nothing gave me before; not even my job. Yes, yes I am a Proud Blogger now.
But the best part of blogging is the love and feedback you get from the fellow readers. They are the star of any good blog. It is very important for any blogger that they keep themselves engaged with their readers; especially food bloggers. Because, readers are the one who see, review, try and test your recipes and then finally they give you the feedback.
I’m thankful to each and every one who is helping me in my journey. But I know that is not enough to thank them. So I decided to do something which will make my readers more comfortable here. From today I’m going to start a new thing in my blog; I’ll be posting top 5 popular recipes of the month. And this post will be published on the very first week of every month which will include 5 recipes on the basis of popularity which were posted in the previous month. I know many of you are very busy to follow a blog on regular basis; many of you don’t even get time to cook daily. So it is for you guys. Now you don’t need to go through the entire blog for a single recipe. Just check the ‘Best of’ tab from the menu where you will get a summary of every month.

Spaghetti Lasagna with Homemade Bolognese Sauce and ¼ cup Cheese. Lasagna without lasagna sheet; filled with fresh and healthy cottage cheese and homemade Bolognese Sauce or meaty red pasta sauce and topped with little cheese(optional) and jalapeno.
Serving & Storage:
Enjoy the delicious yet low cheese spaghetti lasagna hot. You can have it with Bolognese sauce as well (if you got any excess). This thing is very heavy and stuffy so be careful about your left overs. Keep them in air tight container and refrigerate up to 2 days. Don’t freeze. Otherwise the taste will be lost completely.

Involtini or Rollatini is an Italian style Eggplant roll-up which is stuffed with cheese and vegetables; dipped in egg, coated with breadcrumbs and finally baked or roasted. Traditionally eggplant is used for the wrap though today chicken, beef, pork even veal are used.
Serving & Storage:
Serve it warm. You can serve as a whole or cut into 1” thick slices and serve with some fresh green vegetable salad and sour cream. This can also be a perfect side for stir fried or any kind of pasta. I love my involtinis/ rollatinis as appetizer with sour cream and chilled beer.
