If you are wondering now what on earth is Gondhoraj Mishti Doi, let me share a brief introduction.
Gondhoraj Doi (গন্ধরাজ মিষ্টি দই ) is Bengali Mishti Doi infused with Gondhoraj Lebu or King Lime which takes even less than 5 mins to prepare from scratch. Gondhoraj Lebu is combined in three different form in three stages with yogurt to give Mishti Doi intense taste & aroma of King Lime. This No Cook No Bake Bengali Mishti Doi recipe will not require any Gas or Oven at all.
Do Not get intimidated by the mention of Lime in Mishti Doi. Do not encourage brain to think every touch of lime is filled of sourness. Trust me, this is our good old Bengali Mishti Doi with touch of freshness from Gandharaj Lebu or King Lime. You can taste same old sweet yogurt wrapped in the aroma of Gondhoraj in every spoonful of Gondhoraj Doi. Three different parts of Gondhoraj Lebu is incorporated in this yogurt to create layers of flavours.
Now guess the best part? 12 pots (মটকা/ভাঁড়) of Gondhoraj Mishti Doi can be whipped up in less than 5 minutes,. And roaming around the sweet fragrance filled home is definitely bonus of the day.

Read the entire recipe and Notes carefully before you start cooking. Do make sure all ingredients are at room temperature (unless mentioned) and weighed or measured correctly in appropriate weighing scale or measuring instruments such as cups or spoons. Remember these are not regular cups or spoons which is used in daily life.
- Yogurt: 300g, homemade or store bought
- Condensed milk: 3 tbsp
- Milk powder: 1 tbsp
- 1 Gondhoraj Lebu, King Lime, medium to large sized
- Handful of Lebu pata, Lime Leaves
- Wash & clean the Gondhoraj Lebu, King Lime; pat it dry with kitchen towels.
- Scrape off the skin of Gondhoraj Lebu, King Lime carefully. Do Not scrape the white part, only peel the green part of the skin. The zest of green part adds the aroma while zest of White part adds bitterness the food.
- Cut lime and squeeze lime juice out of it. A large sized Gondhoraj Lebu, King Lime will yield 2-3 tbsp of lime juice.
- Take a large bowl to make the Gondhoraj Mishti Doi; bowl must be cleaned & dry.
- Pour yogurt and condensed milk in the bowl and gently whisk. Also add the watery whey from yogurt if you are using homemade yogurt.
- Add our secret agent for creamiest Mishti Doi, milk powder and whisk vigorously to mix things evenly. You may add upto 2 tbsp of milk powder if adding the watery whey from homemade yogurt. This Milk Powder is responsible for thick firm yogurt without any water content in the end.
- When there is no visible lumps in the yogurt mixture add Gondhoraj Lebu, King Lime juice little by little and keep mixing lightly.
- Finally add Gondhoraj Lebu, King Lime zest to the yogurt mixture and mix lightly, just to distribute the zest.
- Any kind of containers can be used to set the Gondhoraj Mishti Doi; yogurt will set firmly. From Earthen or ceramic pots to glass bowls, plastic jars to melamine bowls will work fine for this recipe.
- Now take out your serving bowls and pour the mixture into them evenly. Tap couple of times each bowl/pot to distribute & settle yogurt evenly.
- Sprinkle some Gondhoraj Lebu, King Lime zest on each bowl; use only green part.
- Further garnish with Gondhoraj Lebu pata, King Lime leaves. Do not skip this step as lime leaves will add nice aroma to Gondhoraj Doi when stored for long time.
- Refrigerate Gondhoraj Doi for 1 hour and serve chilled.
