Poison of the Day: IRANI CHAI aka Hyderabadi Dum Tea.
Irani Chai is a special milk tea from Hyderabad more popularly known as Hyderabadi Dum Tea. This rich tea is way different from Indian Masala Chai.
Irani Tea has mild flavour of tea enriched with sweet thickened milk. The tea concoction is cooked for longer hours over dum to achieve unique deep flavours of tea. And milk is flavoured with freshly crushed green cardamom and sweetened separately before adding to Chai concoction.
The entire process of making this Chai is a soothing experience and in bonus you will get aromatic home from the flavours of Irani Chai.
Don’t get intimidated by the fancy words. It may sound complicated but actually it’s nothing but throwing everything in the pan and wait for the magic to happen.
N.B. I get it done by 10 mins whenever I’m making Irani Chai at home.

Read the entire recipe and Notes carefully before you start cooking. Do make sure all ingredients are at room temperature (unless mentioned) and weighed or measured correctly in appropriate weighing scale or measuring instruments such as cups or spoons.
