Shubhaarambh literally means a good start or new beginning and to me it’s synonymous with Mishti Doi.
This may sound weird to some but in my family there’s a ritual which is followed by generations. Whenever there’s something important for any of the family members extra Mishti Doi was made in a ‘bhanr’/kulhad (single serving earthen pot) specifically for that person and a tilak was made on that person’s forehead followed by a spoonful of Mishti doi before stepping out.
It was said if you are going out with the sweetness in mouth you can’t be wrong with anything. As per my understanding this sweet gesture was made to make you feel comfortable with that homely touch when you are tensed already. Also to get you the temporary relief from your pressure which will eventually help you to concentrate on your work better.
I’m not sure whether my assumption is right or wrong but that spoonful of Mishti doi always leads to empty pot when I used to return the pot before stepping out. No that tilak thing was never my cup of tea but I was happy to have extra share of Mishti Doi.
I’m not a dessert person but I’m missing this mishti doi often in this lockdown situation. But I’m definitely not interested in going through all the trouble of making caramel and yogurt from scratch just to make a 2/3 servings of Mishti doi which will take my sugar level sky high eventually.
So I made few trials and now successfully making Sugar-Free Mishti Doi in 5 mins. The only pain is it needs to be chilled for 1 hour in refrigerator.

Do make sure all ingredients are at room temperature (unless mentioned) and weighed or measured correctly in appropriate weighing scale or measuring instruments such as cups or spoons. Remember these are not regular cups or spoons which is used in daily life.
